Federal excise tax is tied to proof gallons removed from bond, not to ordinary accounting profit. TTB's current tax-rate page lists a reduced rate of $2.70 per proof gallon on the first 100,000 eligible proof gallons and $13.34 on the next tier, with a $13.50 general rate in other circumstances. Three profit clocks matter. First, monthly operations can cross EBITDA break-even in 12–24 months if the tasting room opens strongly.
